Rhubarb Pie Recipe
First off let me say i would save this recipe for spring lol apparently rhubarb is out of season. I had to call around to 6 speciality grocery stores to find some . My moms dear friend wanted to get rhubarb pie for his boyfriends birthday and the only bakery he could find that had it wanted $125 to ship seriously $125??? So i was on a mission to find a make this pie for him.
Rhubarb Pie Recipe
Premade pie crust with 2 sheets
5 cups of rhubarb chopped (cut ends off)
1 cup of sugar
2 tablespoons of corn starch
pinch of salt
1/2 tablespoon of orange zest
1/4 teaspoon of cardamon
1 egg
Preheat oven to 400 degrees
Line pie pan with first sheet of dough use a fork to make holes in the bottom
In a large bowl mix rhubarb,sugar,salt,corn starch,orange zest,cardamon
Mix very well
add mixture to pie pan spread evenly
I used my mini leaf cutter to cut out some holes in the top
in a small bowl mix one hole egg to use as a egg wash
use your fork to make pretty edges and egg wash to seal the pie top
brush egg wash over the entire pie
Place pie on a baking sheet and place in the lowest rack on the oven
use tin foil on the edges of the pie to prevent from burning
Bake for 1 hour 30 mins
let sit and cool before serving
