Cowboy cookies with a twist recipe



One of my favorite recipes are cowboy cookies I found on Martha Stewart a few years back. I decided to switch up the recipe a little bit and i absolutely love the turn out .
Instead of the regular chocolate chips i used white chocolate chips I splurged on the ghirardelli white chocolate chips and it made a world of difference. I also toasted the coconut lightly before mixing into the batter. This way it had more of a crunch to match the oatmeal's texture.

Preheat your oven to 350
I would recommend letting the eggs and butter come to room temp before starting.

You will need:

2 cups of all purpose flour
1 tsp of baking soda
1tsp of salt
1/2 tsp of baking powder
2 sticks of unsalted butter
3/4 cups of granulated white sugar
3/4 cups of light brown sugar
2 eggs
1tbsp of vanilla bean paste
1 1/2 cups of rolled oats
1 1/2 cups of white chocolate chips
1/2 cups of toasted coconut
3/4 cups of chopped pecans

In a large bowl beat butter and both sugars
add eggs one at a time and then add vanilla
In a small bowl combine flour ,salt,and baking powder and soda
beat in flour , in two parts will make it less messy
with a wooden spoon or other large spoon stir in by hand the oats,pecans,coconut and chocolate chips.

Scoop onto ungreased cookie sheets by spoon fulls
If you use large spoon fulls it should make 4 dozen cookies , 5 dozen if they are smaller
Bake for 15 min or till golden brown
Transfer to a cool rack and enjoy when cooled!
