Choux Pasry cream puffs recipe

I promised i would post this recipe and finally here it is lol. This is part of my adventures in french pastries. I plan on doing every recipe i can one by one in my free time and teach myself the art of french baking I'll be posting each time i make something. This is the basic recipe for the choux pastry. These were very easy to make . Its kind of daunting when it comes to dough and cooking it on the stove but i was surprised at how easy these were.
 
 
Dough recipe:
 
1 cup of cake flour
1/2 cup plus 1 tbsp whole milk
1 cup plus 1 tbsp of water
1 tbsp of white sugar
1 pinch of salt
6 tbsp of unsalted butter
4 eggs
1 tbsp vanilla bean paste
 
In a medium sized pot add milk ,water,sugar,vanilla,and salt . Bring to a boil then take off the stove and add flour mix well.
put the pot back on the stove on low stir continuously for 1 one till the batter all comes together and away from the sides
pour into a bowl (plastic will help it cool faster) add eggs one at a time and mix together
Transfer to a pastry or icing bag and pipe into circles you can make large or small depending on what you would like . Pipe onto buttered baking sheet
preheat oven to 350
bake for 10 min or till light golden brown see picture above
 
Filling:
I made a whip cream filling I'm more partial to this then the more custard like fillings you normally find.
 
1 cup of heavy whipping cream
2 tbsp of confection sugar you can add more if you like it more sweet
1 tsp vanilla
 
In a bowl or mixer fitted with the whisk attachment beat heavy cream,sugar and vanilla on high till it forms thick peaks.
Add in pastry/icing bag with a large round tip you can either slice it in half and pipe in between like i did or poke a hold underneath your puff and fill cream from there.
 
You can sprinkle with powdered sugar and serve
