The Great Food Blogger Cookie Swap

When i found out about this swap i was soo excited to join. We got our 3 partners and have all sent our cookies out to each other so now its time to share my recipe . First though if you want to sign up next year you can go here to sign up for the newsletter .

I decided to go with a cookie that i could decorate since that's one of my favorite parts so i decided to do a gingerbread shortbread cookie. These came out so yummy and made the house smell amazing .


Here is the recipe 

Gingerbread Shortbread Cookies:
Preheat over to 375

4 cups of all purpose flour
1/2 cup of white sugar
4 sticks of unsalted butter 
2 tbsp of molasses 
1/2 tsp cinnamon 
1/4 tsp nutmeg
1/2 tsp ground ginger
1/8 tsp cloves

In a large bowl mix together all your dry ingredients set aside , make sure the butter has softned just a little then in a mixer beat butter sugar and molasses . Add dry mixture cup by cup and beat in the mixture on slow increasing to medium speed toward the end.

These are roll out cookies but do not flour your work space and roll them out the dough should be just dry enough to roll between 2 pieces of parchment or wax paper.
Cut out your desired shapes and bake them on parchment lined baked sheets about 15-17 min depending on your oven they should be a light golden brown color .

Let cool overnight before decorating. I used royal icing to decorate them but you can use butter cream if your more comfortable working with that . You can find loads of royal icing recipes online to use my best advice is to make sure you have meringue powder.
Decorate and let your icing dry overnight and then its time to serve your cookies!
