Chocolate peanut butter sandwich cookies
So for Christmas i always make my boyfriend a few different types of cookies and after seeing this recipe in the taste of home magazine i knew this was a winner . I changed up the recipe a little the original calls for cream cheese in the filling and i used butter and it also had chopped peanut butter cups around the edges but i didn't use those either. Here is the recipe..
cake part:
1/4 cup of softened unsalted butter softened
4 0z of cream cheese
2 eggs
1 tablespoon of good vanilla extract
1 package of chocolate cake mix
1/4 cup of all purpose flour
filling:
3/4 cup of smooth peanut butter
4 oz of unsalted butter
2 1/2 cups of confection sugar
3 tbsp of milk
1 tbsp of vanilla
Preheat over to 375
in a large mixing bowl cream butter and cream cheese till fluffy
beat in eggs and vanilla
add in cake mix and flour in 3 parts and mix well
roll in 1 inch balls and place on a ungreased baking sheet 2 inches apart
bake for 6-8 min and then let cool for 1 min before placing onto a cooling rack
while cooling make the filling beat peanut butter and cream cheese until light and fluffy
add sugar one cup at a time then beat in milk and vanilla
spread the mixture onto one cookie and top with another and your all ready to enjoy!
A side note i always use unsalted butter for baking but in this recipe you can use regular butter if you like.
